Syrupus Rosaceus Solutivus
or Syrupus Rosarum Pallidi
Syrup of Rose Solutive,
or Syrup of Damask Rose
Western
Infuse as many fresh Damask Rose petals as can be in 4 lbs. of boiling hot Spring Water; steep for 12 hours, press then out, then add a like amount of fresh Rose petals, and steep for another 12 hours. This is to be repeated up to 9 times, each time adding more petals than the last as the liquid will increase by almost a third part every time. To 6 parts of this liquid, add 4 parts of Sugar, and boil to a Syrup.
Typically, it was tripled infused using a descending proportion of the petals each time, as 2½ lbs. the first time, 2 lbs. the second, 1½ the third, continuing until ½ lb. is used the last several times.
Some infused the petals in hot May Dew rather than Spring Water.
Some used 1 part of Sugar to 3 parts of this multiple infusion of Roses.
It is stronger if the petals are beaten before being infused.
