Add the herbs to a jar and cover with Olive Oil; to a quart of oil, add 1⁄4 lb. Sugar (or a similar proportion for different amounts). Let them stand a week without stirring, then put the sealed jar in the sun for 2 weeks, stirring daily. Strain with a cloth and press hard, then put on a low fire with some Red Rose buds and Lavender flowers and simmer for 2 hours; strain and add a gill (1⁄4 pint) of Brandy (ie. to a quart of oil).
